Ingredients

  • 100g rice noodles
  • 1 cup mixed vegetables
  • 1 egg
  • 2 tbsp tamari or soy sauce
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 1 tbsp peanuts, chopped
  • Fresh cilantro

Instructions

  1. Cook rice noodles according to package instructions.
  2. Heat oil in a pan, sauté vegetables 3-4 minutes.
  3. Add egg and scramble.
  4. Add noodles, tamari, and lime juice.
  5. Toss everything together and garnish with peanuts and cilantro.
