Purpose: For example, a casserole may serve the main dish, side dish, snack, or even a dessert. Only a hot dish is the main meal, as it (purposefully) provides all the nutrients that a hearty meal needs.

Covering foods will keep them from browning and crisping, but it will lock in humidity. Food uncovering facilitates browning and crisping, reducing the amount of liquid in the finished dish.
