Blend plenty of green goodness and spices into eggs and then turn the mixture into an omelet.
INGREDIENTS
- 2 eggs
- 1 scoop Green Qi
- Handful fresh greens
- 1 tsp ground turmeric
- 1/2 tsp smoky paprika
- 2 tsp cold-pressed olive oil or coconut oil
- Himalayan salt to taste
- 1/4 cup almond pesto
FOR THE PESTO:
- 2 bunches fresh basil
- 2 garlic cloves
- 100g raw almonds
- juice of 1 fresh lemon
- 1/2 tsp Himalayan salt
- 200ml / 5.2oz cold-pressed olive oil
METHOD
- Whisk together the eggs, Green Qi, turmeric, smoky paprika and pood pinch of salt.
Heat the oil in a medium pan over medium heat. - Add the egg mixture and leave to cook for 2-Z minutes or until the edge starts to dry and the top begins to set.
- Add the greens to half of the omelet, then fold the other half over the top.
- Add the greens to half of the omelet, then fold the other half over the top.
- Serve with the pesto
TO MAKE THE PESTO
- Add all the ingredients except the olive oil to a food processor and process until well combined.
- Then with the motor running, slowly pour in the olive oil
- Adjust to taste with more lemon or salt as needed.
- Store in a sealed container and pour olive oil over the top to prevent the basil oxidising.
- Store in the fridge.
