Apple and Berry Crumble

Enjoy a healthy twist on the traditional apple and berry crumble! With the addition of oats and whole fruit, this dessert offers almost one-quarter of our daily fibre needs.

INGREDIENTS

  •  1 Cup rolled oats
  •  60g Butter softened
  •  1/4 Cup self-raising flour
  •  1/4 Cup Coconut, desiccated
  •  1 Tbsp. honey
  •  125g Mixed berries (frozen or fresh)
  •  3 Medium green apples, unpeeled
  •  2 tsp. Cinnamon
  •  1 Tbsp. raw sugar
  •  2 Tbsp. water

METHO

  1. Pre-heat oven to moderate (180°C)
  2. Slice apples into cubes and place into a saucepan with berries, water, cinnamon and sugar
  3. Allow apples to simmer over medium heat for 5 minutes or until softened, stirring occasionally
  4. In a separate bowl, add the rolled oats, butter, self-raising flour, coconut and honey
  5. Rub ingredients together with fingers until well combined
  6. Add softened apple to a small-medium baking dish
  7. Sprinkle crumble mixture on top of the apples
  8. Bake for 25 minutes or until golden brown
