Pesto. What can’t it do? Whizz it up and use it as a dressing, spread, dip or sauce. Transform a salad or piece of meat into a zesty meal. This pesto is dairy free, and full of flavour./strong>

INGREDIENTS

  • 1 large bunch of basil, or combination of basil and coriander
  • 1 garlic clove
  • 65g / 1/2 cup almonds
  • juice of 1 lemon
  • 4 tbs olive oil
  • 1/4 tbs himalayan salt

METHOD

  1. Roughly tear the herbs into the bowl a food processor or thermomix, then add all the other ingredients.
  2. Pulse until everything comes together, adding more oil if needed.
  3. Adjust to taste with more salt or lemon as needed.
  4. Transfer to a container and cover with more olive oil to preserve it.
  5. Refrigerate and use as you like!
